Here's a simple and delicious recipe for seared scallops:
- 1 pound of fresh sea scallops
- Salt and pepper
- 1 tablespoon of unsalted butter
- 1 tablespoon of olive oil
- 1 clove of garlic, minced
- 1 tablespoon of lemon juice
- Fresh parsley, chopped (optional)
Rinse the scallops under cold water and pat them dry with paper towels. Season both sides of the scallops with salt and pepper.
Heat a large skillet over medium-high heat. Add the butter and olive oil to the pan, swirling to coat the bottom.
When the butter has melted and is sizzling, add the scallops to the pan. Make sure to leave enough space between each scallop so they cook evenly.
