Bought some spare ribs to smoke using 3-2-1 method - they really turned out! Unfortunately there was only 1 rack left when I got to the store. Will have to place my order ahead next time.
Right amount of fat for a great taste, make sure you get enough we fought over the last couple ribs.
Cooked these with a dry rub, sous vide 165 degrees for 12 hours, 140 for 8 hours, then finished on the grill with sauce. Was hard to get them TO the grill, the test bites were so good.
These ribs were so good. Tender and fall off the bone yummy
